LC Best Pot Roast Ever

Best pot roast ever! I made it in my dutch oven and it was wonderful. Proven recipe. Recipe adapted from here:

Recipe modifications:
Omit potatoes.
Reduce onion to 1 small onion.
Add 1 celery heart, stems and leaves.
Reduce quantity to 2 carrots, peeled, not 4.
Make a mirepoix by dicing fine the onion, carrot, and celery.
Brown the meat, remove from pot.
Sautee the mirepoix for a few minutes. Return meat to the pot. Add seasonings. (Dried thyme works - I didn't have fresh). Add beef stock and red wine. Bring to a boil and boil for one minute (to reduce alcohol content). (BTW, 95% of the alcohol is removed after 2-1/2 hours of baking in the oven. I believe the 1 minute boil removes the rest).
Bake at 350°F for 1-1/2 hours. Add chunks of peeled, daikon radish (if you like, I didn't bother). Return the roast to the oven and cook for another hour.
Serves 8. Net carbs are 4.2 per serving. Very satisfying and delicious. Recipe nutritional info is in my diary under "my recipes".
