Do you have a recipe for non-dairy muffins?

Good morning.

I am looking for a recipe for muffins that does not include any dairy products. I have Pamela's Baking Mix. Usually, I make my blueberry muffins with sour cream. Other recipes call for milk. But, today, I am baking for someone who asked me not to use any dairy products.

Any help for me?

    Or heres a recipe from my blog, they make banana choc muffins, really tasty

    3 mashed bananas
    125ml oil (I used olive oil, coconut would be ace)
    2 eggs
    Big dollop honey
    175g ground almonds
    3 tablespoons cocoa (Green and blacks) (or leave them plain and add some vanilla paste and fruit)
    1 teaspoon bicarb
    I also added dried cranberries and a handful of chopped 85% dark choc chunks.

    Here's a great, super simple recipe for vegan banana nut muffins:

    3 very ripe bananas
    1/4 cup oil or vegan margarine, softened
    1 cup sugar
    2 cups flour
    1 tsp salt
    1 tsp baking soda
    1 cup chopped walnuts (optional)

    Pre-heat oven to 360 degrees.

    In a large bowl, mash the bananas with a fork till soft. Add the oil or vegan margarine and sugar and cream together.

    In a separate bowl, combine together the flour, salt, and baking soda. Combine with the banana mixture, stirring gently just to combine.

    Grease or line a muffin pan, and fill each muffin about 2/3 full with batter. Bake for about 25 minutes, or until a toothpick inserted into a muffin comes out clean.

    I don't have a specific recommendation, more a blog recommendation. Google Chocolatecoveredkatie. It's a whole blog full of vegan (no milk, eggs, butter; honey optional) dessert recipes, including muffins.

    I have the easiest recipe! Mix together a box of any brand spice cake mix and a can of Libby's pumpkin pie pure. That's IT. Just those 2 ingredients. I make mini-muffins this way (a 24 mini-muffin pan) and they come to ~71 calories each. No eggs, milk, butter, etc. and they are GOOD!

    Thanks, everyone!

    For today, I chose the pumpkin muffins. Added a sprinkle of cinnamon, nutmeg and allspice to the cake mix and pumpkin. Then, on the slightly cooled muffins, drizzle maple syrup. Shared them with my neighbor.

    ive got some non dairy, vegan muffin recipes but after I broke down the calories, i found them all to be over 200 cals per muffin and to me it's just not worth it !!! I can find other yummier things to eat for 200 cals or less....I hope you find something that works fabulous for you

    I replace fats/oils with unsweetened applesauce. It doesn't change the flavor of the baked goods, and is a nice low cal/low fat sub.

    The recipe below is for Banana Muffins, which would be awesome with some blueberries thrown in. :)

    Though I havent updated it for a while :( I need to get back on it, there are some nice recipes on there. Im also on instagram as amy_in_wonderland if you use that, I post quite a lot of food on there :)
