Angel Lush cupcakes

1 box of angel food cake mix
1 pckg (4 serving size) jello=pudding, vanilla, fat free
1 can-14oz, crushed pineapple in juice, undrained
1 cup thawed light cool whip
strawberries or raspberries for garnish

preheat oven to 350 degrees, prepare cake batter as directed on package. Pour into 24 paper lined muffin cups. Bake 26 minutes or until tops are lightly golden brown. Cool in pan 10 minutes. remove to wire rack and cool completely.

mix pudding mix and pineapple in a medium bowl, Gently sir in cool whip, ice cupcakes and top off with a strawberry.

NOTE: it's important to bake cupcakes immediately after fillin muffin cups to prevent cupcakes from sticking to the paper.

I've also done this with vanilla pudding and pureed strawberries with the cool whip, and oranges...whatever you like, I think banana would be yummy with a tiny dark chocolate drizzle..yum yum!
