Low cal, low carb, apple cake!

This recipe came to me by way of the UK. I like to serve it with vanilla ice cream or light whipped cream, but of course that adds calories.

Turkish Apple Cake

3 Granny Smith apples peeled, cored and chopped
juice of ½ large lemon
½ cup coarsely chopped walnuts
½ cup raisins
½ cup Splenda* (you can substitute sugar or brown sugar)
½ cup flour
1 teaspoon baking powder
pinch of salt
pinch of nutmeg
½ teaspoon vanilla extract
1 egg beaten

1.Preheat oven to 350º
2.In a large bowl, toss chopped apple with lemon juice.
3.In another bowl, combine the flour, nuts, raisins, Splenda, salt, nutmeg and baking powder and mix well.
4.Add the flour mixture to the apples and stir in the egg and vanilla.
5.Pour the mixture into an 8x8 buttered baking dish and bake for 50-60 minutes until lightly brown on top. Serve warm or cold.

Makes 9 servings: 146 calories, 25 carbs, 5 fat, 3 protein, 11 sodium, 3 fiber, per serving when made with Splenda.
