This is a really easy dinner to put together in a couple of minutes that you can leave in the oven in the hands of a young teenager.

Instructions
Things You'll Need:
4 large baking potatoes
1 pkg sausages
1 package frozen vegetable
casserole dish
aluminum foil

The potatoes came from a 20 pound bag that cost $5 so I figure they were worth much less than $1. The sausage were bought on sale for $1. The frozen vegetables cost $1.50. You can see that $5 is a very generous estimate.

Scrub the potatoes and cut in quarters. Lay in casserole dish. You season them if you like. I used salt, pepper, and cajun seasoning.
Note: if your kids like potatoes, add more than 4.

Lay the raw sausages on top of the potatoes. The fat in the meat will drip down and "fry" the potatoes.

Sprinkle the frozen vegetables over everything in the pan. They will steam in the moist heat. You could also add fresh vegetables.

Cover tightly with aluminum foil. Bake at 350 for up to an hour. The kids should be able to smell the food by then.

I dont buy the food being available or out there any reason why we have such a problem with obesity in our country.. its the people not the food that is the problem, lack of eduction, lackluster school lunches, not enough activity from a young age. We need better eduction.0

Agree with jrich. The problem is lack of education and decreased activity levels. Also there is a general thought that healthy options are going to take forever to prep and cook and cost a lot more than their prepackaged, chemically counterparts.
1 potato each, 1-2 sausages each and a helping of frozen veggies seems pretty balanced to me. Based on the tool, per serving there are 428 calories, 43 carbs, 20 fat, 21 protein, 8 sugars, 700 sodium. I like the fact that it's not adding extra fats since the sausages are already pretty loaded.
Seems like this article is geared for a busy family (can be left in who don't have time to cook and might otherwise stop off on and grab something from the drive thru. When you compare your options of having a homecooked meal or drive through fast food, this one seems like a much much heathier option. The idea of showing these meals for less than $5 is to prove that healthy home cooked meals are not expensive or labour intensive. It'd be great to see more people cooking these kinds of meals.0
