EASY Vegetarian Chili

This may be the easiest recipe of all time, and adapt as you like, but here's the basics:

1 large can crushed tomatoes
2 cans black beans (I usually drain and rinse 1 and don't the other)
1 can kidney beans drained and rinsed
1 can sweet corn drained
1 onion chopped in chunks
Green, yellow or red pepper if I have any (sometimes I cheat and use a frozen bag)
Sometimes I add jalapenos
Sometimes I add chopped carrots

Add to flavor:
Chili powder, of course
Ground Cumin
Cayenne Pepper

Dump it all together and simmer on low for hours, or as I prefer, crock-pot it on low for 6-8 hours.

I always try to keep these staples on hand in the winter, and last night threw it together overnight so I would have lunch ready for today. It. Was. Awesome. So I thought I'd share with everyone.

Approximately 8-9 cups from a recipe, and each cup is about 200 calories, 40g carbs, 12g protien and 1g fat.
