veggie filled bell pepper

one serving (two halves)
1/2 onion
some garlic
black pepper
whichever herbs/spices you like for flavour
1 tomato
1/2 bell pepper
2 or so cups mushrooms, it should look like enough to almost fill the pepper.
1 eggwhite
2 to 3 tbsp tomato sauce
1 tbsp green pesto
some grated cheese
1 small portion cooked rice
and of course one bell pepper, cut in half

1: Dice the vegetables and onion, sautee them (except tomato) and add the garlic, pepper, other flavouring you like and the tomato.
2: Add the tomato sauce and pesto. After you've stirred a little while on low to medium heat, put it in a bowl and add the eggwhite and rice. Mix well.
3: fill the halved and cleaned bell pepper with this, top the halves with the cheese. Put this in the oven for about 20-30 minutes.

enjoy! :) You can basically use any vegetable you like to fill, I just happened to have these around.

    urgh I love roasted filled peppers, imagining this with some brie and button mushrooms is making me salivate slightly :bigsmile: :love:
