These sound so yummy to me. I can not wait to try them out. I am going to do the grilled fish on my GF. Thought I would pass them along......
CREAMY DILL SALMON
4 salmon fillets
1 C fat free milk
4 oz of light cream cheese
2 T dill
2 C cooked rice
Spray skillet with cooking spray and cook fish on med-high 5 min each side. Remove and set aside.
Add milk and cream cheese to skillet and stir until creamy still in dill. Return fish to skilled and cook 2 min or until heated.
Serve over rice
GRILLED FISH AND PEPPERS
1 C Italian Dressing
2 t crushed red pepper
1 lb white fish
1 red & 1 green pepper cut into chunks
2 T parmesan cheese
2 T chopped cilantro
Mix dressing and crushed red pepper. Pour over fish and peppers, let marinate 15-30 min turning to coat
Heat grill to med-high and grill fish and peppers 4 min each side. Sprinkle with cheese and cilantro and serve.
