Subbing Quinoa for all/part of rice in Chicken Fried Rice?
Options
Has anyone done this? I made quinoa the other night just as a plain side dish and my family actually liked it, so I want to incorporate it more. I already have Chicken Fried Rice on the docket for tonight's dinner, but have read in a few places that you can sub quinoa for the rice - but of course they just said "you can" they didn't say HOW. 1/2 rice, 1/2 quinoa? Wouldn't the combination of textures be a little weird? Dive in headfirst and go with all quinoa? Do I need to slightly undercook the quinoa so that when I heat it the second time in the wok, it doesn't end up over-cooked? Yeah I know that's what Google is for and I absolutely will google, but I'm also interested in personal experiences/advice. Thanks

quinoa is pretty hard to overcook. i'd cook it as per the package instructions...then stir fry the other ingredients (veggies, eggs, meat, etc), add the quinoa and sauce, mix all around and it's ready.0

While cooking, I add all kinds of things to my quinoa to make it more flavorful too, garlic powder, onion powder, chicken broth...use your imagination.
Another thing to use quinoa for is to thicken a soup. It does not take very much and it sure does absorb a lot of the liquid.0 -

When I made it the other night when they liked it I cooked it in chicken broth rather than water. The only thing that needed to be added in the end was a little salt (I had left it out of the cooking water because I figured the broth would be salty enough - totally wasn't). I'm excited to try other variations!0 -
