Pepper, celery and carrot soup 78cal per serving!

This soup is so simple and filling, perfect for lunch. It makes 750ml (3 cups) which is three servings at only 78 calories each!
you will need:
1 red pepper
1 yellow pepper
2 carrots
3 sticks of celery
1/2 red onion
200g chopped tomatoes
1 chicken stock cube
1 cup of water
1/2 tsp cumin
1/2tsp dried coriander
1/2 tsp turmeric
a pinch of salt and black pepper

Place all the chopped veggies in a pan ( you may add a tiny dash of olive oil if you're worried about things sticking) and cook until soft, about 10 minutes. Then add the chopped tomatoes and stock cube and one cup of water, all spices and seasoning and cook for a further 10 minutes stirring occasionally. Blend until smooth and serve :)

    Oh man this sounds wonderful! I just made carrot cauliflower soup and it was good! Never thought about adding in peppers!! I have to give this one a try! Thank you!!
