I need help choosing a side dish....please

I'm making a vegetarian meatloaf tonight and the recipe is small and will only make 1 slice for each of my family and I can't see it being overly filling? Is there a side dish that generally goes with or can go with meatloaf?
I was thinking just a side salad or something.....but I wanted to see if any of you had some suggestions.

How about baked potatoes? That way you can keep it healthy with limited toppings and guests can pile on the sour cream and butter. :sad: And don't forget the salad.0

my mom always served meatloaf with scalloped potatoes since there was no gravy for mashed. I don't think scalloped potatoes are going to win any healthy-eating awards, though. I like green beans as a thought. I have not tried the mashed cauliflour that is in the south beach diet book, but some people think it is a good substitute.0

I like mashed cauliflower myself. Try adding garlic and tyme to it with a little butter and pepper. No one will know the difference between it and mashed potatoes. I believe that it's healthier too. or google side dishes, there's one out their for orange glazed carrots that's healthy for you too.0

Recently I made a cauliflower and mashed potato.. mash. It was good.
1/2 head cauliflower, broken into florets
1/2 cup nonfat buttermilk
1 lb Yukon Gold potatoes, peeled and quartered
Salt
1/2-3/4 cup low-fat milk
Pepper
1 tbsp butter
2 green onions, chopped
2. For the cauliflower mashed potatoes, place the cauliflower in a pot of boiling water for 15 minutes. Drain. Transfer to a food processor, add buttermilk, and 1/4 cup of the milk and puree until very smooth. Meanwhile place potatoes in the same pot. Add cold salted water to cover the potatoes by about 2 inches. Bring to a boil and simmer until tender, about 15 minutes. Drain and return to saucepan. Over medium heat for 1 to 2 minutes to dry. Mash with a potato masher. Add the cauliflower puree, 1/4 cup milk, 1 tsp salt, and 1/4 tsp pepper. Stir to blend and heat over medium-low heat adding more milk until you get the creamy consistency you want. Stir in the butter and the green onions. Cover and set aside to keep warm.0 -

I vote mashed potatoes. Just use light butter and skim milk. Oh, or corn! Either goes well with meatloaf. Although... Both seem to be pretty high calorie -- you might want to go for some steamed veggies or the side salad instead.0

Thank you all for your suggestions......I phoned hubby with your suggestions and he decided that potatoes are the winner (he doesn't care if they are baked or mashed or roasted) but that's what he's having.
