Tonight we had oven roasted broccoli.
1 pound broccoli, rinsed and trimmed
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup finely grated Parmesan
Directions
Preheat oven to 425 degrees F.
Cut the broccoli florets into bite size pieces. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, kosher salt and pepper and set aside.
Place in the oven and roast just until the broccoli is tender, 8 to 10 more minutes. Remove from the oven, toss in the cheese and serve immediately.0 -
Kholrabi-Cabbage Slaw: Olive Oil, Dijon Mustard, Garlic, Lemon Juice, chopped cilantro, shredded savoy cabbage & kholrabi, chopped scallions..totally yum!
Steamed Green Beans with salt, pepper and garlic powder
Sauteed Zucchini & onions with salt, pepper & garlic powder
Baked sweet potato
Cous-cous with chopped carrots, celery, black olives and a splash of chicken broth & grated cheese0 -
I love broiling my veggies. Just about anything, slapped on a cookie sheet drizzled with olive oil lightly, sprinkled with sea salt ad broiled at 425 is tasty. Some things benefit from a squeeze of fresh lemon when they come out of the over. Seriously though, everything is tasty like this! Brussell sprouts, broccoli, cauliflower, asparagus, green beans...everything.0

Sauted spinach (bloomsdale if you can find it) with a little chile flakes and garlic sauted in the evo first then finish with s&p and lemon juice to taste.0
