Sweet potatoes to die for...

I found this recipe and tried it last night and oh my gosh...I just HAD to share it!! Easy peasy!! I apologize, I did not do the calorie and macro count for it, but it shouldn't be too bad.

1 medium to large sweet potato washed and diced into about 1" cubes
1 tbsp olive oil
2 tbsp clover honey
1 tbsp cinnamon
sprinkle of light brown sugar

Mix it all together in a covered baking dish and bake about 30-45 minutes on 350. BAM!! The original recipe called for 1/4 cup each olive oil and honey, and drizzling olive oil after baking as well, but that was going to be way too much...I used just enough of those to cover/coat the potatoes. It also called for peeling the potatoes, but I didn't and the skins came to a nice softened texture. Enjoy!!

    They're also good without the honey and spices. Just coat them in oil, lay them out on a baking tray, then bake at a high temp. They'll get crispy on the outside and soft and sweet on the inside.
