Diet help - Plateau from hell

Okay - I have Celiac disease, which means I cannot eat gluten. I have been "gluten-free" for about 3-4 years now. However, I recently discovered I wasn't as "gluten-free" as I thought I was, due to cross-contamination from family members who do not eat GF. Also - I am lactose intolerant, which is very common in Celiac patients due to the damage Celiac disease does to your intestine.
Now - I'm working on losing weight - right now I am about 212 and a size 14, and before I started exercising and watching what I ate, I was about 260-270 and a size 22/24. So I've already lost quite a bit, but I'm SERIOUSLY stalled out right now. I haven't been able to stay under 200 (although I have gotten there) in the last year and I've been working out very consistently. The last 2 months or so, I quit working out as consistently because I was VERY discouraged. I had gotten down to 197 again, and then with no explanation I jumped up to like 212, and eventually all the way up to 217. What I finally figured out is I was eating more grains than I was used to, and I think getting quite a bit of dairy, and my body was reacting to it. So now, I'm working hard on eating clean, mostly whole foods, as little packaged food as I can (because they can EASILY be contaminated in the factory, and I'm very sensitive to even trace contamination of gluten). Since I've done that, my body seems to be responding again to my weight loss and exercise efforts.
Has anyone else had experience with this?

Since you diary isn't open the questions are going to be the following:
1. Do you log everyday?
2. Do you weigh your food?
3. Do you log everything? Every bite?
What you eat have very little to do with weight loss vs how much you eat.
I get you have Celiacs and are lactose intolerant, but that being said my understanding from those diseases you get bloat and stomache ache from it. This wont make you create fat.
As for the exercise that doesn't make you lose weight...you need a calorie deficet for that and cardio does help create that but it can also make you retain water to help repair the muscles worked...and esp that if you are weight lifting.
I understand you watching what you eat but eating "clean" doesn't help you lose weight either.....0
