fish!
Tilpai is a good one, melt a tbsp of butter and mix w/ lime jiuce and brush on the tilapia and pan cook for 3-5 mins on each side. I like to cut up avacado and mango and put them on top.
If you have a crock pot put a chicken breast or 2 in there with some chicken stock and half a jar of salsa and cook on low all day, it will shred really easy and tastes alot like fajita chicken from mexican restaurants. Make a fajita with it or put it on a salad.
Balsamic vinegar makes most vegetables taste amazing so if you have not discovered it get some! I especially love cooking brussel sprouts and asparagus with it.
Stuffed cabbage is pretty good IMO and not too hard to make lighter if you get creative.
Those are the ones I can think of off the top of my head. Good luck!0 -

I'm all about the grill. PAPA BEAR LOVES TO GRILL!!! Helps keep your kitchen clean AND it feels good to get outside. Here are some ideas..........
FISH PACKETS---Piece of aluminum foil...put a piece of talapia in it with a slice of onion, some pieces of bell pepper (I think red ones are less bitter than the green ones, a sprig of tyme, 2 or 3 sprays of "I can't believe its not butter", and your favorite seasoning (Mrs. Dash, season salt, watever). Only takes maybe 10 minutes on the grill.....BOOYAH!!!
MY FAVORITE SHRIMP----Put some medium to large shrimp in a ziplock bag with your favorite low-fat/low carb dressing first thing in the morning when you wake up and put it in the fridge til an hour before supper time. After you light your grill to preheat it, pull out your shrimp and spear about 5 or 6 of them on a rosemary sprig. Put them on the grill about 5 minutes per side depending on how hot your grill is. MMMMMMMMMM GOOD!!!
Hope these help :-)0
