Make-Ahead Muffin Melts

This is my favorite ever breakfast recipe, and I am NOT a breakfast person. It keeps for awhile in the fridge and is perfect for rushed mornings. Just heat and eat!

I'm going to link the original recipe from the Pioneer Woman, but it's easily adapted to a lower-calorie/healthier option by substituting reduced-fat mayonnaise and cheese, turkey bacon, and/or low-calorie or whole wheat English muffins.

Also, the recipe indicates it serves 6, allowing a whole English muffin per person, but I usually just eat a half and add some fruit.
