Polenta Recipies
Hi folks...looking for any new ideas for cooking with polenta!! i currently stick to what I know which is as follows:
1x Chicken Breast, 3 x cloves garlic, salt & pepper, 100g ready made polenta diced, 1 tbsp olive oil & a mixture of veg(peppers, tomatoes, mushrooms etc for roasting)
Prepare the polenta according to pack instruction and mix in a baking tray with the chopped veg, garlic, salt & pepper & olive oil. Top with the chicken & cover with tin foil. Cook at 220 degrees for 15 minutes then remove the tin foil & cook for a further 10 minutes. Serve......delicious. You can also add olives &/or sundried tomatoes!!
This is around 400 calories.

I eat polenta once in a while cooked according to the pack instructions and add a dip of grated feta cheese mixed with natural organic yogurt.0
