Hello There! Back again with more oatmeal goodness...
I'm so obsessed with this recipe: http://www.myfitnesspal.com/topics/show/1149444-yummy-pumpkin-protein-baked-oatmeal
It's a great base for any kind of flavor you choose, here is a new variation that was so so so good!
Blueberry Protein Baked Oatmeal
2 Cups Old Fashion Oats
1 Tsp Baking Powder
1/4 Tsp Kosher Salt
2 Tbsp Ground Flax
2 Tsp Brown Sugar Splenda (or use regular Brown sugar or Stevia)
2 Scoops Protein (I used Cinnamon Swirl Cellucor, but Vanilla works great too)
1 Tsp Cinnamon
1 Tsp Vanilla
1 Cup Apple Sauce
1 Cup Blueberries
1.5 Cup Unsweetened Coconut Milk (or use Skim or Almond, but Coconut Milk works fantastic here and gives it a creamy texture)
2 Egg Whites
1. Combine the Oats, Baking Powder, Salt, Splenda, Protein, Flax, and Cinnamon in a bowl. Mix together.
2. Combine the Apple Sauce, Blueberries, Coconut Milk, Egg Whites, and Vanilla. Mix Together.
3. Add wet to dry and mix well.
4. Pour into square baking dish and bake at 375 for about 25-35 minutes--this can vary on your preference as to how soft/well done you like your oatmeal squares to be.
Cut into 9 Squares this has:
Calories: 140
Fat: 2.7
Carbs: 19.4
Fiber: 3.2
Sugar: 5.3
Protein 9.3
