Bacon burger Breakfast protein muffin
Makes 12 jumbo muffins cal per muffin 149 Pro 15 carb 8 fat 6
12 slices Jennie-O - Turkey Bacon,
1 container 100% Liquid Egg Whites, (460 gs ea.)
16 oz Lean Ground Turkey
1 can Rotel - Original Diced Tomatoes & Green Chilies
1 cup (40g) Bob's Red Mill - Gluten Free Whole Grain Oat Flour,
If you like hot & spicy, slice up 1 small jalapeno and add before cooking.
If cooking in a jumbo muffin tin, I weight everything out and write down how much weight of each item goes into the cup. For me it was 22g rotel, 5.5g bacon, turkey 27g, & flour egg mixture was 84g this is per cup and will make 12 jumbo muffins. (weight might vary) You can just cook it in a regular Pyrex dish and cut into 12 squares. Preheat oven to 350 Cook your bacon and set aside (after it's cooled then crumble it) Cook your turkey meat, crumble and season however you like it. (I used seasoned salt, black pepper, garlic powder & onion powder) Set aside. Open a can of Rotel and drain a little bit of the extra liquid, set aside. In a medium bowl add your 1 cup of flour and egg whites, mix well (you'll have to mix in-between cooking if you use a jumbo muffin tin.) spray muffin pan or Pyrex with non stick cooking spray & cook for about 40-45 mins. or until toothpick comes out clean. Keep an eye on it after 35mins because I haven't' got the cook time down to perfect yet. They keep well you can reheat them in the microwave for 1-1.5 mins. Enjoy, I've been eating this all week and yum!
