Anyone have a good recipe for buffalo chicken dip that is low calorie/low fat etc. I used to eat this all the time at restaurants or parties before I got wise to logging, and I'd like a healthier version for now.

:)

I take a can of chicken, some franks buffalo wing sauce, and blue cheese crumbles and mix it together. Then I either eat it straight or cut up some peppers and use them to scoop it up. Delish :)

3 large boneless skinless chicken breasts boiled and shredded
8 oz package of fat free cream cheese, softened
    1/2 cup plain Greek yogurt
1 tsp packet of ranch flavoring
1/2 cup Franks Red Hot Sauce

serving is 1/2c for 130 cal. I eat it with celery sticks.

BONUS - Celery has negative cals. So it could actually be less than 130 cals. :-)

I like to use canned chicken breast- mix with 1/2 low fat mayo, 1/2 nonfat greek yogurt and add tons of franks. You can mix in some low fat cheddar and bake for a little to get it warm. YUMO!

I got this recipe from another thread yesterday. ENJOY!
    INGREDIENTS:

    1 Head Cauliflower
    1 Cup 1% Milk
    3/4 Cup Whole Wheat Flour
    1 Tablespoon Garlic Powder
    1 Tablespoon Butter
1/2 Cup Frank's Red Hot Sauce

    INSTRUCTIONS:

Preheat oven to 450 Degrees. Trim the head of cauliflower into appetizer sized bites and set aside. In a bowl stir together milk, flour and garlic powder. Dip each piece of cauliflower into the batter and allow the extra batter to drip off. Place on a greased baking sheet.

    Bake for 18 minutes.

Melt the butter in a saucepan over low heat and add the Frank's hot sauce and stir. Toss cooked cauliflower pieces with the sauce. Put back on cookie sheet and bake for 5 to 7 more minutes in the oven

Instead of the yogurt and seasoning, I just use hidden valley light ranch dressing.

I've made that - it's VERY tasty! There's also a shrimp version on that website. That's the one I'm gonna make for the super bowl!
