Slow Cooker Chicken w/ onion, garlic & ginger

Just put 4 chicken breasts in the slow cooker with half an onion (chopped) 3 garlic cloves (smashed) and 2 inches of ginger (peeled). Any suggestions on what to do with this once it comes out?!? I would normally shread it, and make tacos of it for my girls, but with the ginger in there, I don't think that will work.

If it were me, I'd serve it with cooked carrots and snap peas, and perhaps some rice. Ginger always makes me think stir-fry, so I would have it with vegetables that you would normally find in stir-fry.0
