How do you log homemade breaded chicken?

Hi all, this might seem like a silly question, but how do you log your homemade breaded chicken? I made this recipe:

...as my gluten-free substitute. But when I'm done dredging the chicken there's almost all of the flour, egg, and potato flakes left that gets thrown away. And I know there's oil on the baking pan- that must be adding some amount of calories?

I want to be as accurate as possible in my calorie counting, but I'm not sure how to count this... Should I just guess? Just add 50 calories to each serving?



(With added onion powder, garlic powder, and Perfect Pinch Basil/Garlic, the recipe was very good, by the way.)

    You measure everything you need to make it... then once you're done measuring the chicken re weigh everything and do the math.
    Like if the flour is 80% of the recipe etc and figure out what is actually ON the chicken.

    Eyeball the grease of choice and measure the remaining breading materials.
