Crawfish Omelette
I just made this for the first time... delicious, filling, and only 183 calories.
1/2 cup of Southwest egg beaters (53 calories)
28 grams (1/4 cup) of velvetta shreds (60 calories)
3 oz of crawfish tails (70 calories)
If you have onions or peppers it would be a nice addition. But I just sauteed the crawfish to brown them a bit, and then added cheese and the crawfish to the eggs. Only took a few minutes, and was absolutely delicious. I also added a splash of crab boil for some extra spice when warming the crawfish.
