Hey ya'll. im from Louisiana where excellent food is everywhere. one of my favorite shows is the biggest loser. ill be making my hubby and I breakfast in the morning from a food recipe I found on the shows website. since im from the south I would love any healthy southern dishes to make . im not that great at cooking so this should be a fun journey. haha. I just never enjoyed cooking until this past year. I was so use to my mom or other family members putting their skills in the kitchen. but Cajun food is just way to fatting. so send me any ideas. you can even add me if you need friends. I could always use friends.. since I just got back on mfp.
thanks

I love to cook, and I have a big appetite, so I'm always experimenting to make tasty, healthy, low calorie versions of the foods I like. Here are some of my favorite dishes so far:

    Turkey Sloppy Joes

1 package extra lean ground turkey
    1 can diced tomatoes
    1 can tomato paste
    2 tsp apple cider vinegar
2 tbsp low calorie BBQ sauce
    1 tbsp mustard

Cook the turkey in a pan over the stove until fully cooked, then add all the other ingredients and stir together. You can split it up into how many meals you want, depending on your calorie goals. For me, I split it into 3 meals and have the mixture on 2 slices of 45 cal wheat bread open faced. Delicious, super filling.

    Turkey Sausage Biscuits with Gravy

1 container extra lean ground turkey
    Italian seasoning
    Ground sage
    Salt
    Pepper
    2 + 1/4 cup flour
    3/4 cup unsweetened applesauce
3/4 cup milk (I used unsweetened vanilla almond milk)
    1/2 tsp baking powder
    1/2 tsp baking soda
    1 tsp salt
    2 beef bouillon cubes
    2 cups warm water
    3 tbsp corn starch

Start by making the dough-mix the flour, applesauce, milk, salt, and baking powder and soda until dough consistency. Flour tabletop surface and roll out dough into a big rectangle, as thin as you can without it showing signs of ripping. The longer you make it lengthwise the better. Once that's done, leave it as is and cook the turkey in a pan with Italian seasoning, ground sage, salt, and pepper. Once fully cooked, pour it onto the dough rectangle and spread it out to be more or less even across the whole thing of dough. Then roll the dough lengthwise like you would to make cinnamon rolls and then cut the pieces to whatever size you want. I made 22 rolls out of mine. Then place them on a sprayed cookie sheet and let them cook in the oven at 350 degrees until lightly browned. While they cook, add the 2 bouillon cubes to the warm water and stir until dissolved. Then pour it into the pan you used to cook the turkey . The leftover juices in the pan will add flavoring to the gravy. Then add salt, pepper, and Italian seasoning to taste and stir in 3 tbsp of corn starch. Let the mixture cook until it thickens to the consistency you want and wala! Done!
