Breakfast Inspiration

Hi Guys.
I need some inspiration for breakfasts. They need to be quick, easy and if hot, microwavable. I take my breakfast to work and eat there because I can not eat too early.
At the moment I am having ready brek with either raisins, cranberries or apricots (or a mixture of two or all three).
I get very bored, very quickly and when that happens a trip to mcdonalds for a bacon and egg mccain muffin and a hash brown usually happens =(

    I recently bought a Vitamix blender and am making smoothies for breakfast. This is my favorite and literally takes 5 min to make. Tastes as good as Smoothie King but loaded with fruits/veggies. Will be drinking for breakfast indefinitely. Can take to work in a thermos (that's what I did today).

    1 cup kale
    1 cup spinach
    1 fuji apple
    1 large carrot
    5 frozen strawberries
    1 clementine
    1/2 scoop vanilla muscle milk
    1-2 cups water
    1 cup ice

    304 calories


    I also like:
    -Fiber one with milk, strawberries (filling, lots of fiber, healthy)
    -Oatmeal with strawberries

    Feel free to check out my diary for ideas. I make a lot of oatmeal and quinoa microwaved with unsweetened almond milk and sometimes cinnamon, then stir in some nut butter and add some fresh fruit. You could also make a yogurt parfait with fresh fruit, nuts, and granola. For a breakfast on-the-go, sometimes I'll have a hard-boiled egg and some baby carrots.

    I've been making a baked oatmeal casserole and divide it into sixths.

    2 cups dry oatmeal
    1/4 cup brown sugar
    1/2 cup chopped nuts ( I use pecans or walnuts)
    1 tsp baking powder
    1 tsp cinn

    Mix those up. In another bowl:

    2 cups milk
    1 egg
    2 tsp vanilla

    Grease baking dish (9x13 or smaller. Doesn't really matter)
    Put sliced bananas on the bottom (2 bananas)
    Sprinkle blueberries over that

    Mix the wet and dry ingredients and pour over bananas and blueberries
    Sprinkle more blueberries on top to your preference

    Bake for 35 to. 40 min at 350

    1/6 of the recipe is 297 calories

    Think outside the box. I never limit myself to just "breakfast foods". Anything you enjoy for lunch or dinner can be a perfectly good breakfast. Veggies, fruit with PButter, chicken, cheese, wraps, leftovers can all be my breakfast during the week. On the weekends, I have the breakfast foods.

    I divide it into sixths and it came out to 298 calories. I use whole milk though and it depends on your other ingredients. It is very good

    Refrigerator Oatmeal

    1/4 cup uncooked old fashioned rolled oats (make sure it's not quick cook)
    1/3 cup milk (I use vanilla almond milk)
    1/4 cup Greek yogurt
    1-1/2 teaspoons dried chia seeds
    1/4 teaspoon vanilla extract
    1 tablespoon raspberry preserves (I use Polaner All Fruit with Fiber)
    1/4 to 1/3 cup raspberries

    Put everything, but the fruit, in your container, they suggest 1/2 pint mason jar, I just use a container with a screw on lid, put the lid on and shake to mix. Add the raspberries to the top, put the lid on and throw it in the refrigerator over night and eat cold. This will last a couple of days in the fridge.

    Take out the vanilla, change the raspberry jam to peanut butter and the raspberries to bananas for another variation. The bananas don't hold up as well as the raspberries, this is best the next day or just wait to put the bananas in.
