How does a 'rest day' work?

I'm very new to exercising and I've read that your body needs a rest day especially in the beginning. Do I not do anything? Do I do some cardio?
I am in physical therapy so I need to do those exercises no matter what but what about everything else?

Welcome!

It means that you should not do any additional exercise than what the physical therapist has told you to do. Enjoy the day :)

Rest is whatever you want to define it as. Some just do light workouts or yoga or a walk, others do absolutely nothing. You just do less than your normal workout.
If you want to do nothing, go right ahead! if you feel you want to, and can (as in it won't cause any discomfort or pain to do so) Then go ahead!

In lifting weights, you'll want to do no lifting weights on a rest day. That's when your muscles repair themselves and get stronger. You don't want to keep tearing them down, and not give them a chance to rebuild.
