Poached chicken - What to do with it??

I have a whole chicken poaching right now. Any suggestions on what to do with it and the broth?? Not looking to make soup at all.

    - chicken salad
    - season w/ mexican seasoning for tacos
    - mix with bbq sauce for bbq sandwiches
    - protein for salad

    - use the broth to cook brown rice, or quinoa in :)

    Chicken pot pie
    Chicken pasta bake
    Chicken enchiladas
    Chicken stir fry

    Reduce the stock right down and freeze in an ice cube tray for future use when you want some extra flavour.
