Ingredients
4 6oz. salmon fillets
8 hamburger rolls
1/2 large red bell pepper or 3 mini colored ones
1 clove garlic
1/2 cup italian bread crumbs
1/2 cup southwest egg beaters
4 tablespoons mayo
1 tablespoon olive oil

** If you'd like to make this dish lower in calories, omit the buns and the mayo. When the burgers are cooked, chop them up in a salad, or eat in a lettuce wrap! Other nutrition info is at the bottom.
Directions
Chop the peppers and garlic. Don't worry about making the peppers small, they will reduce down when they are sauteing.
Heat the skillets over medium, and add the olive oil, chopped peppers, and garlic. Saute for about ten minutes.
While the peppers and garlic saute, take the uncooked salmon and add it to the mixing bowl. Use your hands to mash it up. Add the egg beaters and bread crumbs.
After the peppers have sauteed for ten minutes, add them to the mixing bowl as well. Mix everything together and form into eight patties.
In the same skillet, place 4 of the salmon burgers in on medium high heat. Cook four minutes on each side.
When the burgers are done, add a small amount of mayo to each bun (you can toast them first if you'd like). Four tablespoons will be plenty. Be careful you don't use too much, because it overwhelms the taste of the salmon. Add the salmon patties and enjoy!!
