Oatmeal Banana Pancakes
A new favorite recipe of mine! This made 2 servings for me. About 6 medium sized pancakes total.
½ cup oats (I used old fashioned)
½ banana
1 tsp baking powder
½ tsp cinnamon
3 tbsp liquid egg whites or 2 egg whites
¼ cup cottage cheese (I used 1% small curd)
2 tbsp (give or take) unsweetened almond milk
TOTAL recipe: 275 cals, 45 carbs, 4 fat, 17 protein (using brands that I chose).
These are great with some fruit on top! I made some yesterday and reheated the others this morning. Just as good. I have made 'protein pancakes' before that are essentially eggs and a banana - gross - but these turned out great.
* This isn't my recipe - I found it somewhere and loved it! *

Can you taste the cottage cheese in these? And can you use coconut milk in place of almond milk?0
