Ideas to get to my daily goal

Just started Jan 2 and have been staying at around 1200 per day. I probably need to increase that some and days like today, my HRM said I burned 750 calories in my 65 min circuit workout so I have left 527 calories sitting there.
After my workout I did have a body by vi shake as a "treat" (I am not doing body by vi, I just have a bag of the shake mix because a friend sells it)
I run into problems because I dont know what I am going to have for dinner until I have it. So after dinner I might have some left then I work out and I have even more left. If I am going to eat after dinner, it is likely going to be chocolate or licorice or cookies, so I choose not to have anything.
What are some good night time snacks that can get me to my calorie goal but arent pure sugar. I am also no very hungry at this time either since I drink a lot of water after my workout. Should I go ahead and indulge in a sweet treat? should I just leave the calories for another day?? You are welcome to look at my diary. I am horrible with my nutrition which is another reason I want to stay away from the sugar stuff, it's bad enough during the day.
