I didn't have any uncooked eggs in the house for breakfast this morning, and I had part of a can of salmon that I needed to use, so this is what I came up with, and I plan to remember what I did as it was YUMMY!!
Ingredients: (enough for one large wrap--you could split it between 2 people if you were having it with other menu items)
3.5 oz canned salmon (I used Kirkland/Costco brand)
1 hard boiled egg - (in small pieces)
25 grams of red pepper (in small pieces)
25 grams sweet onion (in small pieces)
1 oz (approx) of plain Geek yogurt
1/2 - 1 teaspoon of dill weed
1 cup Italian Blend salad mix (Kroger brand)
1/2 of a 100-calorie pack of Wholly Guacamole
1 Flat-Out Flat Bread - Healthy Grain w/Flax
Preparation:
Cut up peppers, onions, egg, and combine in bowl with salmon, yogurt, and dill weed. After these ingredients are thoroughly tossed together, place lettuce blend on flat bread. Add the salmon filling on top of the lettuce and place the guacamole on top of the salmon. Roll up your wrap, which could be challenging. I cheated a little and ate a couple of bites of the salmon before rolling to reduce the volume to a more manageable size.
Here is the nutritional breakdown for total amounts listed above:
Calories: 402
Carbs: 29g
Fat: 18g
Protein: 40g
Potassium: 381mg
Sodium: 759mg*
Fiber: 12g
*You could reduce a good portion of the 300 mg sodium "hit" from the canned salmon by using cold cooked salmon.
You could increase the measurements and store in a covered dish in fridge and have an alternative to typical tuna salad. I would keep the lettuce separate (to avoid wilting) and NOT put the guacamole on it until serving, as it will likely change color.
