Vegan breakfast ideas

What do you eat for breakfast? I fell off the vegan wagon pretty hard and need some inspiration to get back to it.

    Make a pot of plain quinoa for the week. Heat it up with non-dairy milk and add nuts, dried/fresh fruit, shredded coconut, maple syrup or whatever you like.

    Hi,

    Actually, I have the same thing pretty much every morning..Cream of Wheat or oatmeal with fruit and fresh carrot/apple juice.
    Sometimes I have a "rice pudding"...leftover brown rice heated with unsweetened vanilla almond milk and cinnamon...yummy!

    All kinds of stuff. Oatmeal with soy milk and fruit, whole wheat toast with peanut butter, pancakes with soy bacon (the Bisquick lite mix is vegan, but you have to use soy milk and egg substitute), grits and scrambled tofu...

    I make smoothies almost every morning. My base is always:
    almond or hemp milk - 1 cup
    coconut water - 1/2 cup
    scoop of ground flax meal
    scoop of maca powder
    1 frozen banana
    a few ice cubes

    I add in:
    cacao powder for a chocolatey treat

    or

    a cup of frozen fruit (sometimes cherries, mango, strawberry, pineapple, depends on what's on hand

    I sometimes veg it up by adding some spinach or kale, or plopping in some carrot or tomatoes.

    Avocado (1/4 of a whole one) can add some awesome creaminess.

    Both of these are really great with fresh fruits, i am particularly fond of diced pears or apples soaked in with them so they get soft when you reheat it. Frozen berries are also a great to add on in the morning. I've made a big batch of steel oats in advance and frozen it in their own jars so that if I'm really lazy i can just reheat one up with some milk and fruit in the morning!

    scrambled tofu is a personal favorite, just diced and mush up tofu and cook it with veggies; i like using onions, garlic and bell pepper with cumin and chili powder, and all topped with fresh diced tomatoes, lime juice, and cilantro. It goes great on top of a corn tortilla for some breakfast tacos! For one person, I usually go for around 1/4 to 1/3 of a block of tofu, depending on what veggies I'll put with it.

    Tofu scramble. Crumble firm tofu and "scramble" with whatever you like, tomatoes, spinach, green onions, etc.

    I love overnight oats (skinnytaste.com, but I always alter the recipes). Have you ever tried chia seed pudding? It's really delicious, but the texture isn't for everyone (I love it!). Use plant milk and spices/fruits to help you make it wonderful! I also have a great vegan banana pancake recipe. Let me know if you need it and I'll share. I don't know where it's from originally, but a friend gave it to me.

    I'm not vegan, so not all of my meals/breakfasts are vegan.
