I didn't want some veges to go to waste and came up with a pretty tasty dish.
- 1/2 lb lean pork tenderloin
- 2 cups bean sprouts
- 3/4 chopped celery
- 1 block of tofu chopped
- 1 thai chili pepper chopped (optional)
- 1 tbsp hoisin sauce
- 1 tbsp sugar
- about 1tbsp of olive oil
- Slice and saute the pork first with olive oil.
- add the veges and stir to your preferred texture
- add hoisin and sprinkle sugar to help caramelize and thicken the sauce
- add tofu and allow to simmer
You can eat as is or pour over rice. I think bamboo shoots would enhance this too.
Provides about 3 servings and caloric value was less than 200.
Enjoy
