Call to Brits: I need a chicken/veg pie recipe
A very long time ago I was an au pair for an English family and cooked out of the Delia's basics cookbook. I can't find that book online anymore or that recipe. Does anyone have a really good chicken pie recipe that's fairly simple to make? I have a veggie friend so I'm thinking about making it vegetarian.
Any recommendations are welcomed-- from all nationalities lol !!!

Jamie Oliver's Turkey, ham and leek pie is bloody gorgeous (recipe is online if you google). Just swap the turkey for chicken.
I also like a chicken & cheese pie recipe from an old recipe book:
* 25 g butter
* 1 onion
* 25 g plain flour
* 200 ml chicken stock
* 5 tbsp milk
* 1/2 tsp mustard powder
* 50 g cheddar cheese, grated (preferably mature)
* 175-225 g cooked chicken
* 175 g pastry (shortcrust or puff, whichever you like)
* salt and pepper
Dice the onion and fry gently in butter until soft. Add the flour, milk and stock, turn up the heat and let it thicken for a few minutes while whisking. Season, and add the mustard powder. Add the cheese and let that melt in. Take it off the heat and stir in the cooked chicken. Let it all cool.
Then, if you're using shortcrust, line a pie dish with half the pastry. add the chicken mixture and put the rest of the pastry on top. If you're only using puff, that may not work as well so I'd only use half the amount, and only use it on top. I sometimes line the dish with shortcrust and put puff pastry on top. You don't need the bottom layer though, so if you want it to be a bit lighter you could omit that.
Bake your pie for 20 minutes t 220 C (390 F) and then turn down to 180 C (350 F) for another 20 minutes.
Neither of those are any good for your vegetarian friend, but instead you could try cheese & onion pie. I don't have a recipe for that, but I'm sure google has lots. That's a British classic.0 -

When I make mine with leftover turkey or chicken I put all the fixings in a casserole dish and use a bisquick topping - I belive the recipe for the topping is on the box - you just add more milk to make it runnyier <is that a word? lol but my son loves it and it's yummy but not sure what the nutritional values are sorry
you could probably do the same thing with just a lot of veg (carrots, turnip, potatoes, peas and whatever else you like) and use vegetable stock instead of gravy and thicken it a bit
I will admit I don't use gravy for my thickened sauce - I make a white sauce and add a bit of chicken soup base to it but it's soooo good lol0 -

After the continued dissapointment of deep fill shop pies and the hunt for the meat, my husband and I decided to make our own pies .
We tried shop pastry first time and it worked alright, but the second time I forgot to take it out of the freezer so made my own. I couldn't believe how quick and simple it was, now I will only make my own unless we want puff pastry (not tackled that yet).
When we make Chicken and veg its usually left over chicken from a sunday dinner along with whatever veg we have in the house, last time was asparagas. My only problem is that the sauce is ALWAYS too runny.
If anyone has a cure or suggestion for that, it would be great. I know it needs a sauce, but im not a "saucy" kinda gal in that I only know how to make up homemade cream cheese and cream sauce, red onion gravy and bisto. Some people add condensed soup but (along with my cream cheese sauces) they are full of calories.0 -
Try Cornflour, it thickens any gravy or sauce. Just mix a heaped teaspoon with a little water (not too much fluid or it defeats to object!) and add to stock or sauce till desired consistency. Very easy :-)0
