Calories for marinades?

So this is the recipe in the crock pot tonight, http://www.getcrocked.com/2013/11/21/slow-cooker-caribbean-paleo-jerk-pork-roast/

I'm totally clear on creating the recipe for the salsa, that's easy. But how would people recommend creating the recipe for the pork itself? Most of the marinade winds up staying in the crock pot. A sticky sauce would be easy, but this liquid sauce is harder.

Should I log just the pork?

How do you calories for items that are part of a recipe but never really get eaten?

before i say anything about the calories, i just have to say that as a jamaican that recipe looks disgusting. make your own jerk spice, it's very very easy : onion, thyme, allspice, black peppers, cinnamon, paprika, cumin, cayenne pepper/chilis, salt.

and yes you add the marinade, it's being added to the meat while they meat cooks which means those calories are added to the meat. and you cover the meat with the sauce when you eat it dont just leave it in the pot

Bump because I don't think the question was answered per se.. (although seconded on the jerk spice substitution, heh)

I'm making a marinade for my salmon, but the marinade itself is discarded once I go to grill it. Obviously some of the soy sauce and sugar will remain (or else what's the point of marinating!), but not nearly so much as I started off with.

I was going to quarter the amounts (so if 1c brown sugar, then 1/4c goes into the recipe calculator), but I'm not sure if there's a better way to account for it.

I marinade in a bowl, measure everything out and weigh it before the meat goes in, let the meat soak, then I weigh what is left. You can get a pretty decent estimation that way.

Unless I was going to use it for a finishing sauce, I never bothered being that anal about it. In my experience, the added calories from marinating meats are fairly negligible.

For no scientific reason - I log 1/2 the calories for the marinade

In theory I would agree, but since the marinade is soy sauce and brown sugar, I do rather want to keep an eye on both. :) But yeah, I would agree it's negligible on the whole.
