Better versions of carbs?

I'm not the paleo diet, but I don't think I should be in the strictest sense because afterall I am a foodie and I can't give up carbs long term. And I've heard of so many cases where people lose lots of weight on high protein and virtually no carbs and the second they eat a piece of bread after, they just inflate.
So I want to incorporate carbs every now and then to my diet. Some friends suggested oatmeal etc, but I really really don't enjoy it. I was wondering, if they are any better healthier versions of rice, pasta etc that I could eat instead?
And will this affect my losing weight? I'm looking to loose inches, I'm a "skinny fat" as they say, so there's not loads of weight/inches to lose. Which may be harder because it's kinda like "the last few pounds" to lose. So i dont know what to do about carbs!
Oh and right now Im on a calorie deficit and weight training. Im trying to shed the fat, not gain that much lean muscle.

vegetable carbs rock! complex carbs.....good for you all around. The last 20lbs is the toughest so good luck. I'm doing the same thing right now and its not easy. The last 20 require you to eat, drink and live like a super athlete.0

Unless you have a doctor telling you not to eat certain types of food, you'll do fine losing weight to reasonable bodyfat levels while eating rice, pasta, etc. As long as you hit your calorie deficit and macros.
There's some debate on foods to get down to 5-6% bodyfat, but I'm guessing that's not particularly relevant.0
