Carrot coconut soup
Very easy to make and really yummy
~600 g carrots (diced)
2 dl red lentils
4 dl (one can) coconut milk
1-2 onion(s) (finely diced)
1 glove of garlic (finely diced)
1 l vegtable broth
2 tbsp oil
1 tsp curry powder
+other spices you like (I used chili powder, salt, paprika, etc)
Peel and dice the carrots, onions and garlic. Sauté them and spice in oil for few minutes.Add lentils and vegetable broth. Let simmer in medium high under lid for about 25 mins (until carrots are cooked).
Puree the soup and add the coconut milk.
Enjoy!
Serves around 6 persons and 260 calories per serving
