Backstrap recipes? (not involving a grill or smoker, please)
I recently was given a 3-lb backstrap and it's possible I may end up being given another one. I ended up making two recipes with the first one - I cut off about 3/4 lb, wrapped it in 3 slices of bacon and cooked it in the oven. I used the rest in a slow-cooker stew.
I've seen a lot of recipes calling for a wood-fired grill, also a smoker, but really was hoping for some ideas on how to cook backstrap using more traditional in-the-house equipment - i.e., stove, slow cooker, oven.
