How to measure calories in a meal

hi
I wonder if I'm calculating my calories in the right way. So I'd like your opinions please.
For example, lets say I'm cooking a bolognese sauce to go with pasta.
Ingredients:
1 medium onion
3 cloves garlic
1 leek
200 g shredded carrots
400g lean beef mince
tin of chopped tomatoes
1 tbsp olive oil
100ml red wine
herbs, salt and pepper
Method:
Chop onion, garlic and leek; heat oil and fry onion, garlic and leek, add beef mince and brown; add carrots; add wine, add tin of tomatoes, herbs, salt and pepper and simmer for 25 mins.
When I calculate calories, should I add calories for the onion, garlic, leek and carrots as RAW and then add calories for 1 tbsp of olive oil? Or should I take calories for the veggies as FRIED and then still add calories of 1 tbsp of oil?
I know this might be a stupid question, but I've really been wondering.

raw ingredients and use the recipe builder. cooking the food doesn't change the calorie count...it is best to just enter raw and then how much ever oil you're using. If you're putting in some generic "sauteed vegetables" from the database, that is coming from a user and you have no idea how much oil they used, etc.0
