Yummy Carrot Cake Protein Baked Oatmeal

I'm back with more baked oatmeal. See:

Carrot Cake Protein Baked Oatmeal
2 Cups Old Fashion Oats
2 Scoops Protein (I used Cinnamon Swirl Cellucor, but Vanilla works great too)
1 Cup Shredded Carrot
2 Tbsp Ground Flax
1/4 Cup Stevia
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/4 Tsp Kosher Salt
1 Tsp Cinnamon
.5 Cup Pumpkin Puree
2 Cup Unsweetened Coconut Milk (or use Skim or Almond, but Coconut Milk works fantastic here and gives it a creamy texture)
2 Egg White
1 Tsp Vanilla
I added in 1/4 cup shredded unsweetened coconut to mine. Raisins or nuts would be awesome too!
1. Combine the Oats, Baking Powder, Salt, Stevia, Protein, Baking Soda, Cinnamon and Flax in a bowl. Mix together.
2. Combine the Pumpkin, Carrots, Coconut Milk, and Egg White. Mix Together.
3. Add wet to dry and mix well.
4. Pour into square baking dish and bake at 375 for about 30-35 minutes.
Split into 9 Servings this has:
Calories: 137
Fat: 4
Carbs: 16
Fiber: 3
Sugar: 2
Protein 9
I usually scarf this down still cold from the fridge, because I'm a barbarian.

You can glaze this with :
2 Tbs cream cheese and melt in microwave until mostly soft. Add in 1/4 lemon, 2 tablespoons of vanilla yogurt, 1 1/2 teaspoons vanilla extract, and sweetener to taste
OR
Toast in toaster oven and slather a pat of butter on it :bigsmile:0 -

I just finished making this and its super good. I used almond milk in place of coconut, and I added 6 scoops of leftover Body by Vi powder for some added protein and whatnot. Its really yummy! I also made an icing for it that's not super healthy, but in total its 217 calories per piece, and the pieces aren't that small!0
