I made a recipe today and have less than a cup of fat free ricotta cheese left over. It expires in a few days. Any suggestions of how I can use it up? Thanks

Cook up a few lasagna noodles and make manicotti?
Or forgo the noodles and mix in some spinach, feta (or your choice of cheeses), egg and sauteed onion and garlic. Spoon into a mini-muffin tin and bake. Crustless spinach pie bites.

mix in some vanilla extract and splenda for a treat. Or honey. Or chocolate syrup.0
