Chicken Spinach Mushroom Pannini

Ok I absolutely love Lean Cuisines ‎Chicken Spinach Mushroom Pannini but wanted to make my own healthier version. Heres what I did :)
2 slices Natures Own35 cal Honey Wheat Bread
2 oz Chicken breast baked and cubed
1 Frigo Cheese Head Light Mozzarella stick
.25 C Fresh Spinach
.25 C Fresh Mushrooms
.25 C Fresh Red Pepper
LIGHTLY coat pan with OliveOil Spray and saute last three ingredients until tender. Add chicken (already cooked and diced)
Put all on bread. "String" the cheese and cover this mixture then top with other slice of bread. Transfer all to Panini Pan OR just pop it right back into the saute pan and toast both sides! 241 calories for one pannini
Lean Cuisine version is 310 calories and is open face with just one slice of bread and chock full of preservatives!
Eat healthy and enjoy!

ETA: I personally enjoy adding 2 tsp of Kraft reduced fat grated parmesan. This adds another 20 calories
