I have about 7-8 lbs to lose but have plateau'd the last 2 weeks. Should I up my cals to 1800 to lose 0.5 lbs a week instead? Currently on 1 lb a week on Sedentary at 1680 cals.

First, 2 weeks isn't really a plateau, the body can stall for a couple of weeks sometimes then just carry on.
Secondly, with only 7-8lbs to lose, it's going to come off very slowly anyway. Half a pound a week is probably a good idea (I've also got about 7 pounds to lose and am on half a pound a week). You could up your calories if you want, or you could stick with what you're doing and just wait a bit longer. I've had plateaus that have lasted several weeks before, haven't changed a thing in my routine, then just started losing weight again.0
