Fish Ideas

For my New Year's resolution, I decided to try one new food goal each month. I've declared this month "Fish February" in an attempt to work more fish into my diet. I like fish...I like fish a lot. I just tend not to branch out past canned tuna, pre-cooked salmon, or a piece of fish baked in the oven with a little olive oil and lemon juice. I know how to cook, and I enjoy cooking...I just never really learned how to make delicious fish recipes. So, if you have some ideas...I'd love to hear them. Here are the criteria:

* Fairly fast...I don't get home from work most nights until close to 6.
* Fairly cost-efficient...I'm on a teacher's salary, and my grocery budget right now is kind of limited.
* Healthy...as delicious as beer-battered fish is, I'm trying to lose my pregnancy weight.
* Fish that's not difficult to find...I'm in Kansas and couldn't really be any further away from the ocean.

Bonus points if my 1-year old will eat it too....he's not particularly picky.

    My go to fish is baked cod. Very low fat and low calorie, and great protein.

    I season with lemon pepper, nothing else.

    For sides: typically steamed or boiled broccoli.

    I put skin-on wild caught sockeye salmon on my George Foreman grill and love it. I put a little lemon oil, salt and pepper on it and am good to go. The skin gets crispy and tastes great. I eat it separately from the meat.

    That wasn't the cheapest fish available but tilapia works, too.

    Both are available pretty much anywhere; fresh food shops, BJs/Sams/Costco clubs, Wally World etc.

    Smoked salmon - it's often cheap to buy trimmings. Add them to a sauce of Creme fraiche and lemon juice, serve over pasta.

    Does shellfish count? Prawn and rocket salad with grapefruit dressing. Stir fry with scallops.

    Fillets of white fish, wrap in a parcel of grease proof paper or tinfoil, add a squeeze of lemon or splash of white wine, bake in the oven.

    Chunky firm fish like monkfish is great threaded on skewers with cherry tomatoes and courgette/ zucchini and grilled.
