Easy Low Carb meal ideas Please!!

Hey all,

I need some easy Low Carb meal ideas. I am getting really bored. I need to lose weight and food plays a big part in that since i have PCOS.

Please help!

  • Hi there! Just Google "low carb recipes" and you will find lots of resources. I would also suggest reading about the benefits of coconut flour, which is very low in carbs and can be used in cookies, cakes, chicken and dumplings, and on and on! Good luck and God bless.
  • Unless you do virtually nothing all day, carbs are critical! Don't avoid carbs!
  • My Doc said I had to do the Low Carbs because I am insulin resistant.

    Have you tried vegetables and tofu stir-fry? Also, roasted vegetables. If you eat legumes those are not really low in carbs but they are the good kind of carbs.

    Now, how many calories did I burn getting up and down from my soap box? :laugh:

    Let's see.....I used to do south beach and if I remember correctly chicken pieces cut up, sautee in olive oil with some zucchini or other summer squash, mushrooms, and toss in with some parmesan cheese toward the end and heat up enough to get a bit melty and crusty. Mmmmmm.

  • Thanks buggaboo73!! Like you said, I just need new ideas/recipies. After a while diets can become boring when eating the same things. Sometimes I tend to think about it twice before asking questions/suggestions just not to have to have someone tell me what I am doing wrong, etc. I am just following physician's orders because due to my PCOS, I am prone to diabetes. Not cool.

    Hi - I'm insulin resistant too. I keep my carbs low, but not following atkins... Loosely basing my diet on Paleo. It's essential to eat complex carbohydrates (veggies and fruits) after a workout when your body can handle an insulin spike. I can't provide you with any one recipe in particular because I don't follow any one plan - I eat to suit my nutritional requirements.

    However working with a nutrition coach who is very familiar with IR, he's made it clear to me to drop all grain based carbs (except ones with low GI count like steel cut oats, quinoa, barley...) and eat lots of vegetables. Make sure you balance your carbs with at least 30g protein per meal - never eat a carb on it's own unless you've just worked out.

    One meal I love making is a Korean bulgogi - instead of wraps I use lettuce leafs and instead of rice I use chop suey... really flavorful and fun to eat!
