Roasted Squash Seeds
I just tried this today, and it was awesome so I just thought I'd share...
As I was preparing my Spaghetti Squash, I decided to roast the seeds as well.
Cleaned them (removed the stringy bits)
Washed them
Dried them
Tossed them in a bit of EVOO, S&P and Paprika (because I'm gangster)
Roasted them alongside my Spaghetti Squash (in a preheated oven @ 350) for 20 minutes
Removed the seeds, but kept the squash in there until it was good and ready (an additional 40 minutes)
Seeds came out deeeeelicious. The best part?
Per 64g: 285cal, 12g fat, 34g carbs, 12g protein
High in Magnesium and Zinc
