Specific Protein Problem

Ok, so I know there are a billion protein posts on here, but I can't find an answer that really helps. I really need help.
Don't hate me, but I had gastric bypass surgery on Christmas Eve. I have been fighting an infection that almost killed me, but I am recovering and am finally able to eat again. Sort of. Of course, very small amounts, and I am thankfully very responsive to sugar or Girl Scout Cookie season would be killing me. However, it doesn't seem to matter what I try to eat, I can't get enough protein in during the day (my Dr.'s goal is 60 grams a day). I have only just started tracking online again, so you won't see much recent history. I lived on Greek yogurt for three weeks while the antibiotics ran their course, and am trying to focus on hitting that goal, if nothing else.
So here's the problem: I can only eat 2 - 3 oz at a time. That was the goal of surgery. But I have a huge list of foods I cannot eat because of allergies or intolerances after surgery, including artificial sweeteners, which I find in just about every protein supplement. I am about sick of eggs and cheese; I am in hopes you guys can help me. Here are a few things I CANNOT eat, so maybe you will have some suggestions:
NO LIST:
Chicken
Turkey
Tree Nuts (Peanuts and Cashews are OK)
Artificial Sweeteners
Milk only in vVERY small doses
What are your thoughts?

PB2 (defatted peanut powder) (it has added sugar, and I don't understand what "responsive to sugar" means, but if you're not supposed to have added sugar, you could look for other brands that might not have added sugar -- I've heard there is such a thing, but I haven't seen it in the grocery store)

Do you mix this with water? Wouldn't it taste yucky, or is it tasteless? Guess you could mix with fruit juice.0 -

Yes, you can mix with water. Add a few blueberries, maybe a peeled clementine, or whatever fruit you like and put it in the blender for natural flavor. If you have fruit juice, that makes it even simpler. Just use the fruit juice instead of water. You can choose your protein (whey, pea, rice, hemp, etc), flavor or unflavored, and your choice of sweetener (artificial or natural). Try truenutrition.com for options.0

Unjury has unflavored protein powder that I add to my morning coffee, but I also add the chocolate flavor on occasion for a morning mocha. They also have chicken flavored - which tastes like chicken broth. All are 20+ grams of protein.0

I don't know why I can eat dairy, but cannot drink milk, but that is the case.0
