I'm on a 40:30:30 diet and came up with this filling, protein rich salad:

Southwest Salad
1 serving

Ingredients
Salad:
1 1/2 cups greens (I like spinach, spring mix or romaine)
1/2 cup cooked black beans
1/4 medium onion, chopped
3 medium button mushrooms, chopped
1/4 red pepper, chopped
100g sirloin chopped (or you could use chicken)

Dressing:
1/4 cup cottage cheese
1 tbsp. salsa

Directions:
1. Mix ingredients together in a bowl
2. In another smaller bowl mix together dressing ingredients
3. Toss dressing with salad and mix

Using the ingredients I used the nutritional information is:

Calories - 296
Carbs - 19
Fat - 8
Protein - 35
Fiber - 6
Sodium - 445

Yum! I love adding protein to salads! Tuna, grilled salmon, beef, chicken, beans, ground turkey w/taco seasonings for a taco salad, etc.

I like it, because I am a salad person and I am always looking for recipes with lean protein. Thank you!

Once you try it, if you have any other suggestions on what would be a good addition to the salad ... please share :)
