Low fat, low calorie turkey meatloaf
So I LOVE mince, but having beef or lamb mince several times a week isn't the most sensible of things, especially when trying to keep calories and saturate fat down. My answer - turkey breast mince. You can do exactly the same thing with turkey mince as you can with traditional red meat mince (bolognese, burgers, meatball, etc.), but the level of calories and fat is much lower.
Last night I thought I would try something a little different and make a meatloaf using turkey mince. It was amazing, so thought I would share it with you lovely lot...
Serves 4
You need:
500g mince
1 large onion
2 cloves of garlic
2-3 large carrots
1 medium egg
Breadcrumbs / Matzomeal
2 tablespoons tomato ketchup
1 tablespoon worcestershire sauce
Salt
Pepper
Your choice of herbs and spices - I used paprika, sage, oregano and parsley
Method:
Pre heat your oven to approx 200 degrees celcius. Line a loaf tin with baking/parchment paper.
Chop carrots, onion and garlic and add to a large mixing bowl (you can fry off the onions and garlic first if you wish). Add ALL of the ingredients to the bowl. Mix all of the ingredients together (it is best to use your hands!). If the mixture is too dry, add another egg or some water. If the mixture is too wet add some more breadcrumbs/matzomeal. You want a fairly moist (but not runny) texture as turkey can be a lot drier than other meats.
Once all the ingredients are well mixed, pour the mixture into the tin and place in the oven for 50-60minutes, checking every 20minutes or so.
This can be served with anything you like - last night I had brown rice and veg. Next time I will probably have sweet potato.
