Looking to start Jamie Eason LiveFit with my daughter

Wondering if this is a good plan for us. I am fat and out of shape, she is very trim and kind of out of shape. We have been doing the Group Power classes together but both of us want to get into heavy lifting. Her to gain weight, me to lose, and both to gain strength and muscle mass. This is a transformation workout so I want to know if it would also be a good fit for her just getting started with weights.
Neither one of us has any idea what weight to start with. In doing the 3 sets, do we do one set lighter to warm up, then increase for the second 2 sets? Is it okay to do a light cardio treadmill or elliptical afterwards as a cool-down or NO cardio at all the first phase? The first week or 2 is this to get an idea on what weights we should be lifting to? We both want to really build muscle and aren't afraid to build too much, so I'm assuming we want to find the weights that allow us to lift to exhaustion. Is this correct?
We have been working with a trainer, that we both love personally, and have seen great results with her from the people she has trained, but don't feel she is listening to us. We both have told her we want to build and she just doesn't get that. Her reply is that you don't want to become a bodybuilder do you. Well no, but yes! That is not our goal, but to be healthy and strong is our goal. Actually, if really putting her mind to it I think my daughter (16) could really get into this, and at my age, I have to be serious or start breaking bones. No thank you. As much as I hate it, I really don't think our current trainer gets it. The best thing for me right now is to strengthen muscle to strengthen bone, and in order to do that I need to heavy lift. She has us on too much cardio, low weights, high reps, which I'm afraid will eventually go against our goals.
